Why should we solve the problem?
Street food is perceived to be a major public health risk due to a lack of basic infrastructure and services but in India this problem is ignored to such an extent that it is presumed that the peculiar taste to street food is due to the unhygienic practices. This insight sparked an opportunity to redefine the hygienic practices.
Problem Statement
How might we improve the hygiene of Street food and small scale Restaurants?
Understanding the struggles faced by vendors.
Serving Utensils used by Vendors
Vendors with more capital tend to use a metal plate to serve. Whereas vendors with lesser capital tend to use single-use disposable plates/bowls.
The Real Scenario
The street food vendors were aware of food hygiene and had a favourable attitude towards it, but it was not translated in their hygiene practice.
Initiative by FSSAI
FSSAI launched the Eat Right Moment, aimed at getting citizens to choose healthier food and dietary options and also ensuring food safety- from procurement to consumption and disposal.
By focusing on improving the hygiene of utensils, we can solve 77.7% of health issues that are caused due to street food.
Insights from the Research
83%
street food breakfast vendors use reusable plates.
50%
vendors carry only 5 - 20 litres of water to sales point, this water is not enough for dishwashing and food preparation.
38%
According to the Public Health Association, only 38% wash their hands with soap before eating and only 30% before preparing food.
65%
vendors use single-use plates like paper dish, plastic container, aluminium foil plate, etc.
Redefined Problem Statement
How might we improve the hygiene of breakfast serving vendors?
After a feasible evaluation of available research data, we realized that chaat vendors are not the ones who use reusable plates more but breakfast vendors are the ones who use reusable plates more.
Market Opportunity
There is no tool/ equipment that caters the needs of a Street Vendor. These vendors use some flexible approach to clean the utensils with available resources or use a disposable paper wrap on the plate.
1. 77% of people fall sick due to consumption of unhygienic street
food.
2. Post COVID-19 scenarios will demand higher hygienic practice
from food industry.
3. Current cleaning environment of food vendors is very
unpleasant.
